Born in the heart of the Modena district, it is the fruit of a masterful mix of vinegar and cooked grape-must from selected Sangiovese and Lambrusco grape varieties. The aging in barriques and in oak casks creates Balsamic Vinegar of Modena PGI with the typical features of the traditional Varvello quality. A dark reddish brown,high-density, bittersweet taste, it is balanced and pleasant and excellent with red meat (also raw) and roasts, on risottos, Parmesan cheese, ice cream and berries.
