These vinegars are created only with Italian wines and, like all fine wines, age in oak casks. But Varvello also means PGI Balsamic Vinegar of Modena: produced in the Bastiglia Acetaia, a real jewel that combines the tradition of balsamic and wood with the most modern technology. Here, in a masterly blend, wine vinegar encounters cooked grape-must selected from two noble wines (Sangiovese and Lambrusco). The aging in oak casks creates PGI Balsamic Vinegar of Modena with an inimitable flavour, in perfect harmony with Varvello’s traditional quality.
